The Bikini Cocktail

Makes enough for 10 servings

To make the Citrus Syrup (yields 750ml)

300ml newly squeezed clementine juice
200ml recently pressed lemon juice
500g granulated sugar

For the Drink (produces 850ml, to serve 10)

400ml decent vodka
100ml classic gin
150ml peach schnapps
200ml clementine cordial (as made above)
A few cranberries, for garnish
Mandarin essential oil, to finish

Method

To prepare the Cordial: Put all the components into a pan, bring to a light boil, mixing to dissolve. Then, remove from the stove allowing it to cool fully. Pour into an sterilised bottle, close it keeping it chilled, where it will keep for about one month.

Preparing the Premix: Pour the specified spirits and syrup into a big jug, let it rest for one hour, then pass it through best through muslin, to ensure it's perfectly clear.

To serve: Add 85ml of your premix into your cocktail shaker packed with ice, and agitate gently for one minute to chill. Filter into a cold coupe glass or similar, decorate with the cranberries adding the final touch by giving it a light spray of mandarin oil over the top.
